Ingredients
- 6 T. olive oil
- 5 large onions, chopped
- 8 T. fresh ginger, grated
- 8 tsp. Chili powder
- 2 T. cumin
- 8 sweet potatoes, diced
- 8 cups OJ
- 8 T garlic
- 5 cups vegetable broth
- 2 can black beans
- 1/4 c. serano chilies or jalepenos (pickled), chopped
- ¼ tsp. cinnamon
- Salt and pepper
Preparation
Saute onions in olive oil. Add ginger, chili powder, cumin, garlic and stir for 2 minutes. Add sweet potatoes, OJ and bring to a boil. Reduce heat to simmer and stir in broth, beans, cinnamon and chilies. Cover and simmer until tender. Serve with sour cream, cilantro and green onions.
