Cuban Sweet Potato Soup

Ingredients

  • 6 T. olive oil
  • 5 large onions, chopped
  • 8 T. fresh ginger, grated
  • 8 tsp. Chili powder
  • 2 T. cumin
  • 8 sweet potatoes, diced
  • 8 cups OJ
  • 8 T garlic
  • 5 cups vegetable broth
  • 2 can black beans
  • 1/4 c. serano chilies or jalepenos (pickled), chopped
  • ¼ tsp. cinnamon
  • Salt and pepper

 


 

Preparation

Saute onions in olive oil. Add ginger, chili powder, cumin, garlic and stir for 2 minutes.  Add sweet potatoes, OJ  and bring to a boil.  Reduce heat to simmer and stir in broth, beans, cinnamon and chilies.  Cover and simmer until tender.  Serve with sour cream, cilantro and green onions.
